The completion date is agreed between the vendor and purchaser and forms part of the contract for sale. Completion usually takes place 1 month after exchange of contracts, but this may vary depending on the circumstances of the parties and whether there is a chain involved. I just wanted to add that the actual date can be sooner if both parties are keen to sell fast, and no mortgage is required - it is not uncommon for cash sales to complete in 2 weeks.
